How delicious is a sponge cake made with COCONUT SUGAR!
We suggest a recipe for you:
250g wholemeal flour
250g COCONUT SUGAR
1 small cup of extra virgin olive oil
2 small cups of vegetable spelt drink
1 teaspoon of powdered yeast
Mix together the flour, sugar, egg whites, oil, milk-substitute drink and the lemon zest.
When it is completely mixed together, add the teaspoon of powdered yeast and mix again.
Add the egg whites beaten until stiff and stir carefully so that they don’t collapse.
Put the mixture into a mould greased with virgin olive oil and place directly in an oven preheated at 180°C.
Do not open the oven during baking and when you see that the cake has risen and the surface is starting to go golden-brown, put a little coconut sugar on top to decorate it. Check that it is completely baked by pricking it with a skewer and if it comes out dry, turn off the oven. If not, leave it until it is ready. Leave to cool with the oven turned off and closed and enjoy!
